Curried Chicken Salad

This recipe was made healthier by switching to fat-free mayonnaise and yogurt, and reducing the salt.

 

1 cup fat-free mayonnaise
1 cup plain low-fat yogurt
1 tablespoon curry powder 
1-3/4 teaspoons Kosher salt
1-1/4 teaspoons freshly ground black pepper
1-1/4 pounds boneless, skinless chicken breast, cooked
1/2 cup raisins
1 cup almonds, sliced or slivered
1/2 cup green onions, sliced

In large bowl, whisk together mayonnaise, yogurt, curry powder, salt and pepper. For best flavor, cover and refrigerate 1-6 hours before finishing salad. 

Shred chicken with fork. Add raisins, almonds and green onions. Gently fold chicken mixture into mayonnaise mixture. Chill.
